CrunchyStir-Fry

Cups of Fruits and Vegetables Per Person: 0.50

1/2cup vertically sliced onion
1cup thinly sliced carrots (2 medium)
1tsp vegetable oil
1tsp dried basil, crushed
1cup fresh or frozen Chinese pea pods
1Tbsp water
1Golden Delicious or Criterion apple (medium), cored andthinly sliced
Stir-fryonion, carrots and basil in oil in non-stick skillet until carrotsare tender. Stir in pea pods and water; stir-fry 2 minutes. Removefrom heat; stir in apples, Serve hot.

Corned Beef and Cabbage Stir Fry

 

“2 tablespoons oil
1/2 teaspoon salt
1 small cabbage — shredded
1 small onion — finely chopped
1 medium tart apples — peeled and chopped
1/4 cup water
1 teaspoon sugar
1 1 pound can corned beef brisket — coarsely chopped
2 tablespoons soy sauce
2 teaspoons cornstarch — dissolved in
– 2 T. water
Heat oil with salt in wok. Add cabbage, onion and apple. Stir
fry for 2 minutes. Add water and sugar. Cover and steam for about
10 minutes or until cabbage in still slightly crisp. Uncover and
stir occassionally. Add corned beef. Stir fry for 1 minute. Cover
and steam about 1 to 2 minutes or until corned beef in heated. Add
soy sauce and dissolved cornstarch. Stir until slightly
thickened.

Wild Rice, Yellow Pepper, and Black-Eyed Pea Salad

2 c Cooked wild rice
1/4 c Chopped fresh parsley
1 3/4 Cooked or canned (drained
And rinsed) black-eyed peas 6 T Fresh lemon juice
2 T Red wine vinegar
1 c Chopped yellow (or green)
2 T Dijon mustard
Bell pepper 1 lg Clove garlic, minced
1 c Chopped jicama
1 t Salt (optional)
1 c Chopped zucchini
1 t Dried rosemary, crumbled
12 Cherry tomatoes, quartered
1/2 t Pepper
In a large bowl, combine the wild rice, black-eyed peas, bell
pepper, jicama, zucchini, tomatoes, and parsley. In a small bowl,
stir together the lemon juice, vinegar, mustard, garlic, salt,
rosemary, and pepper. Pour over the salad and toss. From: “Hayes
